We use meticulous hands-on viticultural techniques to ensure highly concentrated fruit flavours. We select only the best organic parcels from two premium vineyards in Marlborough’s Southern Valleys - sought after for their excellent Pinot Noir - and carefully hand-picked to maintain the integrit of the fruit.

 

The 2020 harvest produced some spectacular results with top quality fruit and what will be an outstanding vintage, despite a nationwide lockdown due to COVID-19. Marlborough saw a mild start to the growing season, with the soil retaining a good level of moisture after a fairly dry winter period. Budburst was nice and even; slightly reduced number of Pinot Noir bunches meant more concentrated flavours in the fruit. The long, slow late summer ripening conditions allowed excellent flavour and colour development, delivering clean ripe fruit in excellent condition.

The expertise of our winemakers allows the wine to speak for itself. The wine is cold soaked for six days, with a portion of this in whole bunches. The warm 28 degree ferment is hand plunged only once every 24 hours at most, before the wine spends another 14 days on skins. Free run juice and light pressings combine to give the wine richness and structure. Maturation takes place for twelve months in 300L French oak hogshead barrels.

A tagine, derived from North Africa and Morocco, is best described as a casserole. The word also describes the uniquely-shaped vessel that the dish is cooked in.
